Indonesian Rice

Ingredients

  • Rice (boiled)-2 cup
  • Mushroom-1/2 tin
  • Spring Onion-2
  • Green Chili-2
  • Red Pepper-1 (whole)
  • Oil-3 tbsp
  • Salt-As required

Sauce

  • Red pepper (whole)-6
  • Onion-4 (chopped)
  • Capsicum-1 (chopped)
  • Garlic-8 cloves (crushed)
  • Oil-1 tbsp

Method

  • Take spring onion, green chili, whole red pepper, mushroom and cut them.
  • Take a pan put oil in it put spring onion, mushroom, red pepper and fry it for a while.
  • After that add rice with salt and cook it.


Sauce

  • Heat up 1 tbsp oil then add capsicum, garlic, green chili, onion and cook it for 2 minutes.
  • Now blend it in a blender or Sill.
  • Take half sauce and put it into rice.
  • Serve these rice with remaining Sauce.
NOTE:
  I had it with the half fried egg and some fresh veggies . A perfect meal it is !!

Hot & Spicy Rice(Arabian rice)

Ingredients

Rice (Soak) 250 gm
Garam masala powder ½ tsp
Oil 3tbsp
Salt 1 tsp
Green chilies 3 strips
Yellow color few drops
chili garlic sauce1tb,chilli sauce 2tb ,ketchup 1tb mix all this is sauce for topping

Method

Heat oil, adds soaked rice, and fry for a minute. Add salt, all spice powder, and 1. ¼ cup water. Cover and cook till rice water dries out. Remove 1 cup rice in a bowl. Add yellow color; add to the remaining white rice.don't mix just put them in middle . Add in green chilies. Leave on DAM for 10 minutes. Mix well before serving. Serve in a platter, top with shots. Drizzle with sauce and serve immediately

I served it with chicken spicy wings :)

MEXICAN CHICKEN WITH FRIED RICE


 

 Ingredients:
Chicken 1 of 1 ½ kg karhai cut
Onion 1 cut into rings
Capsicum 1 cut into rings
Garlic paste 2 tsp
Paprika 1 tsp
Salt 1 tsp
Oil ¼ cup
Oregano leaves ½ tsp
Ketchup 3 tbsp
White sauce 1 cup
Water 1 cup



Method:

1. Heat oil in a pan and fry the garlic paste, for 2 minutes. Add chicken pieces and fry for 5 minutes or until the color changes.
2. Than add salt, paprika & water, cook the chicken for 15 minutes.
3. Add oregano, white sauce and ketchup. Mix well.
4. Lastly add in onion & Capsicum rings .Cover and simmer for a few minutes.
5. Serve with fried rice.


FRIED RICE

Ingredients:
Rice boiled 2 cups
Carrot 3 tbsp (Chopped in cubes)
Spring Onion 3 tbsp (chopped)
Garlic 1 tsp (chopped)
White pepper ¼ tsp
Soya sauce 1tbsp
Salt ½ tsp
Oil ¼ cup


Method:
Heat oil in a pan and fry the chopped garlic. Add the boiled rice with the seasonings and mix well.
Fold in the vegetables and mix well.





WHITE SAUCE

Ingredients:


Mustard ½ tsp
Pepper ½ tsp
Salt ½ tsp
Butter 2 tbsp
Flour 3 tbsp
Milk ¾ cup
Water ½ cup

Method:
1. Heat butter in a pan and blend 3tbsps of flour into the melted butter
2. Cook over low heat, stirring, for 4 to 5 minutes. Cooking for this length of time will minimize 'flour' taste.
3. Add seasoning, mustard, milk & water stirring continuously Cook until the sauce thickens.

To serve:
Serve the Mexican chicken on a platter, with white sauce and a rice mould on the side Garnish with salad leaves, tomato wedges.

Shrimp Egg Rice

Ingredients

cooked Rice - 450 gm, long-grain
Eggs - 2, beaten
Salt - 1/2 tsp
Oil - 4 tbsp
Onion - 1, large, chopped
Garlic Clove - 1, crushed
Shrimps - 120 gm, peeled
Green Peas - 60 gm, shelled
Spring Onions - 2, chopped
Soy Sauce - 2 tbsp
carrots 2.
Method:

1. Mix the salt into the eggs.
2. Keep aside.
3. Heat 1 tbsp oil in a kadai.
4. Add the onion and cook till transparent.
5. Pour in the egg and stir gently.
6. Do not scramble the egg mixture.
7. When done, remove and keep aside.
8. Heat another 1 tbsp of oil and fry the garlic, shrimps, peas and spring onions for 2 minutes.
9. Remove and keep aside.
10. Heat the remaining oil.
11. Add the cooked rice and salt.
12. Stir fry to heat the rice through.
13. Add the eggs, the shrimps mixture along with soy sauce.
14. Mix well.
15. Serve immediately.

Green rice

Ingredients:


Onions 2

Green leafy vegetables -3 cups (any variety may be chosen)

Peanuts roasted - 1 tbsp.

Lemon - 1

Oil - 3 Tbsp.


For the masala powder


Black gram dal- 1 tsp

Coriander seeds - 1 1/2 tsp.

Fenugreek-1/4 tsp.

Bengal gram dal - 1 tsp.

Asafoetida -pinch

red chillies- 5 (Fry the above ingredients in half a tsp. of oil and powder


For the Seasoning:


Cumin seeds- 1/4 tsp.

Black gram dal - 1 tsp.

Mustard seeds- 1/4 tsp

cashew-nuts few

Cook rice till each grain is separate. Allow it to cool completely. Cut onions into small pieces. Clean greens, remove stems wash and then chop finely. Heat oil, fry seasonings and then with cut green chillies. Add onions and fry for two minutes.

Continue frying with greens till it shrinks and raw flavor goes from it. Add cooled rice, salt, powdered spices, pea nut powder and mix well in high flame till everything is mixed well. Add grated fresh coconut, squeeze lemon, mix well and serve with curd raita.

Spinach Rice

Ingredients:

Basmati Rice 1 1/2 cups
Spinach 2 Cups Packed
Boiled Garbanzo / Chickpeas 1/2 Cup
Onion 1 Large
Green Chillies 3
Ginger 1 1/2 inch piece
Cumin Seeds 1/4 tsp
Caraway Seeds 1/4 tsp
Green Cardamom 2
Cloves 3
Cinnamon 1 inch stick
Bay Leaf 1
Coriander Powder 1 tsp
Red Chile Powder 1/2 tsp
Garam Masala Powder 1/4 tsp
Milk 1 Cup
Salt to taste
Oil 2 tbsps

Method of preparation:

Soak the rice in water for half an hour and strain the rice.
Wash and finely chop spinach leaves.
Peel, wash and slice the onions.
Remove stems, wash and slit green chillies into two.
Peel, wash and mince the ginger.
Heat oil in a deep heavy bottomed pan, add cumin seeds, caraway seeds, cardamom, cloves, cinnamon and bay leaf.
When seeds start to change color, add sliced onion, minced ginger and green chillies.
When onion turns translucent, add spinach, red chile powder, coriander powder and salt.
Once spinach wilts, add the soaked basmati rice and fry again for couple of seconds.
Add garbanzo, milk and 1 1/2 cups of water to the rice pot.
Stir once and cook covered till all the water has been absorbed by the rice.
Alternatively, pressure cook for 3 whistles.
Sprinkle garam masala on top and serve spinach rice with raita of your choice.

Notes: Make sure rice is cooked right

Singaporean Rice

Step 1: Boil Rice.. and that would be the first layer in the dish......

Step 2: Boil Noodles.... second layer....

Step 3 and 4: The mayonnaise dip and the chicken gravy... either can be put first...

Mayo Dip:

The ingredients here are for the two dishes that I made.. increase or decrease as per your need:

Mayonnaise (One cup)
Ketchup (Half Cup)
Chopped Garlic (Not paste)
crushed red pepper (1 to 2 tsp) as per your taste

Mix them all together and the dip is ready.

Chicken Gravy:

Boneless Chicken: 1 kg
Capsicum: 2-3
Carrots: 2-3
Ketchup: 2 tbsps
Soya sauce: 2 tbsps
crushed red pepper: 1 tsp
Black pepper: 1 tsp
Salt as per taste.
Cornflour: 2 tbsp

Fry boneless chicken in a pan. When almost done add the vegetables and all the spices. (Adjust spices according to your taste). Saute them well. Finally add cornflour dissolved in water into the pan. Stir and let it cook for 5 mins or so. The consistency should be of a thick gravy.

So then over the rice and noodles layer the gravy first then the dip or vice-verse. Finally garnish them with fried garlic and also green chillies if you want.

Garlic rice n shashlik sticks

Shashlik Sticks

500 gms Chicken (cut in cubes)
2-3 Capsicum (cut in square)
2-3 Red Tomatoes (cut in square)
2 Onions (cut in square)
1 ts ginger garlic paste
Salt to taste
1/2 ts ground red pepper
1/2 ts gram masala powder
4-5 Tbs Lemon Juice
1/4 cup cooking Oil


Mix all the spices and lemon juice, and apply on chicken, marinate for 4-5 hours...
take the shashlik sticks and screw the chicken, capsicum, onion, and tomato cubes...
Heat 2-3 Tbsp oil and cook the chicken sticks...



Garlic Rice

4 Cups Rice (Boil 'em)
7-8 large cloves of Garlic (finely chopped, DON'T grind)
3-4 Green Chillies (finely chopped)
1-2 Red Chillies (for added color, finely chopped)
2 Ts Salt (or to taste)
2-3 Tbs Oil
Green Garlic (if available, finely chopped)

Put oil in the cooking pot, add garlic and fry, when it's color turns golden, add salt, green garlic, chillies, and fry for a while, add salt and boiled rice and mix well, cover the rice and keep on low flame for 3-4 minutes... dish out!

serve with Chili garlic sauce, or shashlik sauce :)

My veggie fried rice!

I made this with leftover boiled rice I had in my fridge & took just 10 Min in total as I had frozen veg ...too.

So I used

A bowl of left over rice
butter/margarine 1tbspn
frozen veges (half a cup) any u like I added peas,carrots,sweet corn,green beans.
Chinese salt/flavor enhancer (a pinch)
soya sauce 2tblspn

Boil veges a bit (should still have crunch when u drain. put veges back to pan add butter and fry for a minute. add Chinese salt & soya sauce.fry for like 2 Min. add rice.mix well.simmer for 10 minutes.all done!!

suji halwa, allu sabzi and parathay!

Ingredients:

1/2 cup semolina(suji)
1 cup water
1 cup ghee
3/4th cup sugar.
cardamom. 3 to 4 seeded.
a pinch of food color.


Method:


Heat ghee in a wok. put cardamom in it along with semolina. fry till it gives aroma. then add sugar and fry again. in the end add the food color in the water and pour it in the semolina. keep stirring.
when water is almost evaporated. lower the stove to very low or 1. and put the halwa on dum covered with lid for 5 to 7 minutes.



allu sabzi.:

 Ingredients:

 potatoes. 2 peeled and sliced
onion 1 small
tomatoes. 1 small
green chillies 2 to 3
coriander leaves. a bunch
cumin seed 1/2 tsp
onion seeds 1/4th tsp
whole red chillies 3 to 4
salt to taste
red pepper to taste
turmeric powder 1/2 tsp
oil. 3 to 4 tbsp.

Method:


heat oil in a pan. add the onion and fry them till it changes color and get pinkish. add cumin onion and red chilli fry for a min. add potatoes and fry in a medium heat. add the salt turmeric and red pepper powder. fry for 4 to 5 minutes. then add tomatoes and half green chillies cover the lid and let them cook in steam in low medium heat. when oil gets separate add the remaining green chillies and coriander bunch. and remove from stove.
