Ingredients:
400g chicken breast fillets, cut into strips
150g broccoli, cut into small florets
1 red onion, cut into wedges
1 carrot, sliced on the diagonal
1 red capsicum, sliced
50g (1/3 cup) cashews
2 teaspoons fish sauce
1-2 tablespoons chilli jam
Steamed rice, to serve
Method:
Step 1: First heat a little oil in large nonstick frying pan over medium-high heat and Stir fry the chicken in batches for 4-5 minutes until it is golden brown, Now remove it from heat and cover to keep it warm.
Step 2: Now in nonstick frying pan add a little more oil and stir-fry the onion, carrot, capsicum and broccoli until tender.
Step 3: Add the fish sauce and chilli jam and stir-fry for 4-5 minutes or until well combined. Return the chicken to the frying pan(work) and add half the cashews. Stir-fry until warmed through.
