Bagels with poppy Seeds and Oregano


Ingredients:

1 kg flour
1 tsp salt
1 tsp sugar
3 tbsp oil
100 gm yogurt
50 gm fresh yeast
550 ml warm water
1 tbsp baking powder

Directions:

Mix the flour, salt and sugar together, add the oil and yogurt and crumble the yeast over them, add the water and mix in your electrical mixer till the dough is very soft and doesn't stick at all to the hands. You can add more flour if you need to avoid the stickiness. I had to add 3 more cups of flour myself till my dough got very soft and non sticky. Leave the dough to rest and rise for at least 30 minutes, to help the process I usually open the over for 10 minutes to warm it up and then I leave my dough covered with a wet towel to help it rise. Roll out the dough thick enough and with a cutter take out round shaped with a small round hall in the middle.

In any large pan boil some water with 1 tbsp sugar and 1 tbsp baking powder and when it comes to a boil add it your bagels, leave them for a couple of minutes and once they rise to the surface remove them to your baking sheet. Brush the surface of the bagels with some egg wash (an egg, pinch salt, pinch pepper) and then cover with poppy seeds, oregano, rose marry, paprika, sesame or anything you like.

Bake in low heat until they're all puffed up and golden on the top.

For serving, stuff the bagel with any cheese you prefer and maybe any vegetables. I stuffed mine with fetta cheese and cucumbers, had it with some olives on the side, it was very delicious!
