Palak Paneer

Ingredients:

4 tablespoons olive oil

1 table spoon ginger garlic paste

2 dried red chile peppers

1/2 cup finely chopped onion

2 teaspoons ground cumin

1 teaspoon fenugreek seeds

1 teaspoon ground turmeric

3 pounds fresh spinach, chopped

1 large tomato, chopped

fresh cilantro leaves

cream cheese (i used kirri squares - 5)

1 teaspoon tomato paste

1 cube Maggie chicken stock

3 tablespoon lemon juice

salt to taste

Directions:

1.In a large saucepan heat 4 tablespoons of olive oil and saute chopped onions in it, add ginger garlic paste,
fenugreek seeds,tomato paste, Maggie cube, red chilies (optional ingredient) and fry onions until brown. Mix in the cumin, coriander, turmeric, chopped tomato and a lil bit of water and cover it with the lid. Let the mixture cook for about 15 mins in steam. On the other hand add the spinach in boiling water and boil it till 10 mins, handful at a time until it is cooked down. Remove water by stainer and allow the spinach to cool slightly.

2.When the tomato mixture is half done and turns a bit thick then add spinach to it and cilantro (add more or less according to taste)add Salt to taste along with lemon juice. Cover the lid of the saucepan and cook over low heat for another 20 mins in steam.

3.In a fry pan can fry the cheese very carefully and until browned or can directly decorate the cheese cubes on the spinach. It still will taste great. Garnish with cilantro
