CHICKEN HANDI


Ingredients:

Some oil
1 small Onion (finely chopped)
1/2 tsp Cumin Seeds
3 cloves of garlic (chopped)
1/2 inch fresh ginger (finely diced)
3-6 curry leaves (optional but I love the aroma so I use it)
1/2 tsp of coriander seeds
1 tsp ginger garlic paste
3 black pepper corn
1 tsp salt or to taste
1 tbsp Almond Powder
1 whole fresh chicken or u can use 1 kg of fresh boneless chicken too
1 KNORR or any kind chicken stock cube
1 1/2 cups of hot water (just keep aside to add little by little)
3 tomatoes (diced)
1 tsp red chilli powder - or to taste
1/2 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp garam masala..
1/2 TSP turmeric powder
1/2 tsp paprika powder (for the nice red color)
1 tsp Tomato paste
2 or 3 tbsps yogurt
2-3 tbps Unsalted Butter

Directions:

Pour a little bit of oil in the handi or pot....warm it up..add chopped onions, cumin seeds, chopped garlic, diced ginger, curry leaves, coriander seeds, ginger garlic paste, black pepper corn, salt....FRY and stir till onions turn golden add Almond Powder...stir and add chicken - fry on medium heat for 10 mins...till chicken is done...Add CHICKEN Stock cube....add tomatoes, red chilli powder, coriander powder, cumin powder, garam masala, turmeric powder, paprika powder, tomato paste and yogurt..and stir...after 2 -3 mins add a little bit of water if it's too dry..or if you want to have more gravy u can add more water!
Add Unsalted butter...stir...cook on low heat for another 2 mins....

Now Garnish with fresh coriander leaves and big green chilli (chopped)

You can serve this in the handi itself or in a nice dish...with naan, paratha or nice fresh hot boiled rice :)
