Baked Potato
Ingredients:
4 medium size potatoes
salt
Garlic butter:
1/2 cup (4oz) butter, softened at room temperature
4 garlic cloves, peeled
squeeze of fresh lemon juice
fresh parsley leaves
freshly milled black pepper
Directions:
Preheat the oven to 200C/400F
Wash the potatoes well in cold water and then dry them with kitchen paper.
Prick the skin several times with the point of a sharp knife or skewer.
Lay the potatoes on a baking sheet and season with salt.
Bake the potatoes for approximately 1¼ to 1½ hours, depending on the size.
Test with a sharp knife or skewer - when inserted, it should be tender with no resistance.
Remove the potatoes from the oven and allow to cool for about 5 minutes.
With a sharp knife, slit a cross into the top of the potato.
Open up the potato by pinching with thumb and forefinger using both hands.
Pour the garlic butter between the slits and bake for 2/3 mins more.
GARLIC BUTTER:
If you have a food processor, chop the garlic and parsley finely. Then add the butter, a squeeze of lemon juice and season with freshly milled black pepper. Process on full speed until smooth.
Note: Same Garlic Butter can be used on French bread for Garlic Bread
- make sure you brush a bit of olive oil on the french bread and then bake it with the garlic butter side up!
