simple haleem


FOR THE KHORMA:


• Heat oil, fry onions till dark brown, remove and keep aside.
• Add whole garam masala and black peppercorns.
• When it splutters add mutton.
• Add whipped yogurt along with salt, red chilli powder, ginger garlic paste, turmeric powder, cilantro, mint, green chillies and 1 cup water.
• also add paste of cashews and poppy seeds. (roast and grind).
• Once the mutton is done , sprinkle garam masala powder on the top, mix well and keep aside.

[NOTE: The khorma shouldn’t be very thick in consistency like the usual one we make]

FOR THE WHEAT: (1/4th kg of broken wheat)

• Heat 3/4th cup oil, add 1 onion.
• When the onion becomes translucent add ginger garlic paste, the broken wheat and turmeric powder along with some water to cover it fully.
• When done, remove, cool, grind and keep aside.

FOR THE MUTTON: (0.75 kg):

• Add very little red chilli powder, salt, turmeric powder and ginger garlic paste.
• Heat ½-1 cup oil, add the mutton and 1 cup water.
• Pressure cook until the mutton is done.
• Cool and grind.

METHOD:
• Combine the ground wheat and mutton. Mix very well.
• Add 3/4th of the khorma into this mixture. Save 1/4th of it for garnishing while serving.
• Mix thoroughly until the three are combined well. [If need be add some water to adjust consistency]
• Cook this mixture on stove top for 15 minutes over medium flame. Keep stirring continuously or it will get burnt.
• While serving, garnish with the khorma, fried onions, chopped cilantro, mint leaves and fried cashew nuts. Done. :-) :D
