Vegetables used:
Capsicum (de-seeded and cut in cubes)
Tomatoes (deseeded and cut in cubes): u can use the pulp for sauce …so don’t throw it off
Onion cut layers of onion into cubes...
Mushrooms /cottage cheese ( I used mushroom but in any case cut it into cubes.)
For marination:
Yogurt:3 tbsp
Red chilli powder: 1tsp
Turmeric: very little
Salt: According to taste
Pomegranate (Anardana):2 tbsp
Green Chillies: 3-4
Fennel seeds (roasted):1 tbsp
Cumin seed (Roasted):1 tbsp
Lemon juice:2-3 lemons
Cottage cheese: 2 tbsp
Ginger: 3-4 cloves
Garlic: 1 inch piece
Shashlik sticks
(Mix them all…..Grind them)
Sesame seeds (roasted): 2 tbsp
Marinate all the vegetables along with sesame seeds(don’t grind them with marination mixture)…marinate them just before u are about to fry them otherwise vegetables will release their water and will not going to look fresh when get fried…then arrange vegetables on shaslik stick (u can arrange one piece of onion, one piece of capsicum, one piece of mushroom or whatever arrangement u want)
For Sauce:
Tomato ketchup: ½ cup
Tomato wedges (when u de-seeded the tomatoes for shashlik u can use the same for sauce)
Chinese salt According to taste
Vinegar: 1 tbsp (You can increase the qty if u want to)
Red chillies flakes: 1 tbsp
Garlic: Cut into small pieces (not chopped)
Chicken stock (u can made it by dissolving chicken powder into water) -2 cups
Soya sauce: 2 tbsp
Sugar: 1 tsp
Chillies: 1 chopped
Black pepper: 1 tsp
Oil: 1 tbsp
Corn flour: 2 tbsp(dissolved into water)
Method:
Heat oil and fry garlic then fry tomatoes wedges for a while then add ketchup and fry again in order to have a cooked texture (to remove rawness) then add sugar and fry. Add chicken stock and mix them. After that add black pepper,chilli flakes,vinegar,Chinese salt, soya sauce and cook it well when u want to finalize add corn flour and cook it for a while and the sauce is ready.
Now fry shashlik stick on low flame in little oil(u can also u use hot plate)…..keep on rotating the stick stick so that all sides get cooked(do not cook them too much) otherwise they will become soggy when shashlik sticks get fried pour sauce over the shashlik stick and simmer for 2- minutes and then dish out !!
