Ingredients
3″ piece of fresh ginger1-1/2lbs boneless chicken breasts-cut into 11/2″ cubes
2Tbs. canola oil
1 large onion-thinly sliced
2 garlic cloves -minced
1/4c soy sauce
2Tbs. white vinegar
2Tbs. sugar
1/2c scallions-sliced
Procedure
- Peel ginger and cut into 1/8″-thick matchsticks to measure 1/2 cup.
- Soak in cold water 10 mins.
- Drain heat oil in skillet over high heat,brown in 2 batches,6-8 mins.
- Set aside.
- In same skillet over medium heat ,cook ginger,onion and garlic,stirring until browned,8-10 mins.
- Add soy sauce,white vinegar and sugar,cook over high heat until thick,3-4 mins.
- Add chicken,stir to warm.
- Remove from heat.
- Serve it
